SITUATION

Proposal Name: Plum Cider Research

Background: Fermented beverages have a long history. The initating member has been breeding a yeast specialised in apple cider fermentation, and believes it may have some utility in fermenting plum juice.

Summary of proposed changes: Purchasing plum concentrate, fermenting it and inviting members to taste-test the result.

How will this proposal advance the objectives of the Association? We will gain experience regarding the fermentation of plum juice, and the utility of existing Australian yeast strains.

What direct or indirect conflicts of interest does the initiating member or any other member have in this proposal? I have no financial interest in my yeast, and am not charging for it.

Will or might this proposal lead to the Association trading while insolvent? No, the costs are minimal.

What are the proposal's effects on other legal, reputational or financial risks? none.

What planned activities will the project require?

  • Cleaning and preparing the vessel: estimated 1 hour
  • Mixing concentrate, water, yeast, yeast nutrient, acidity regulators and bacterial inhibitors: estimated 1 hour
  • Monitoring the ferment: approximately 0.25 hours per week for 12 weeks.
  • Filtering, racking and bottling: estimate 4 hours.
